The limited release Will O’ The Wisp White Whiskey is possibly our most unique
expression. Derived from our bourbon mash this is a purpose made white whiskey. The lighter color comes from using a medium toast wine grade barrel versus traditional, darker charred oak cooperages. This technique creates a whiskey that is very light on the palate that takes on wine characteristics as evidenced by its floral nose and fruity undertones. As an added bonus Will O’ The Wisp picks up a nice, crisp finish similar to that of a dry white wine. Patiently aged in medium toast new white oak.
